I own many Calphalon pans and all are either the stainless tri-ply or the nonstick stainless like this. I have the 8″, 10″ and 12″ pans. These pans are made of the highest quality. The outside has a brilliant polished stainless luster and the inside a very high quality non-stick surface. I can make anything in these and clean up is a breeze. Burn stuff on it and it will practically come clean with a paper towel! It takes a quick wash with a soft cloth and it is done. Food never sticks. I use these almost everyday and have had no problems, the non-stick is just like new still. I never use metal utensils, only wood, plastic, or ideally silicone. Also, don’t put them in the dishwasher, they clean easy and you risk etching them with the harsh chemicals in dishwasher detergent. Also, even though it has a metal handle, it stays cool. It will start to get hot if you cook on very high heat or for an extended period of time, but in most cases it stays cool to the touch and I don’t need to employ a hot pad. A great pan for reasonable money!!

I own the majority of the tri-ply line by Calphalon. This is the only non-stick item in my entire house since I tried to do away with all of it when learning of the health risks. In a way, this pan wasn’t a necessary purchase. All of my other cookware is stainless and I am very confident in using them with all types of foods, including eggs. My husband on the other hand, is not. I can cook eggs in a stainless pan because I know “the tricks” like making sure the eggs are room temperature and getting the right low heat setting in order to make them not stick, but he finds all of that a little complicated. He isn’t unlike many people–many people prefer to get the eggs out of the fridge and just drop them in. I also admit, using a nonstick for eggs is just easier. So I bought this so he could have a nonstick pan all to himself for his fried eggs that he wouldn’t have to worry about the right temperatures and correct heat or anything, and we’re both much happier for it.
I suppose I could have just bought him a cheap, basic teflon pan for $10 at any store, but what fun would that be for me if I ever want to use it, which I do occasionally. I use it when making omelettes now (I may as well since it’s the designated egg pan), and when making quesadillas. It’s just a little easier, although I’d still bet the farm that my 10 inch stainless would be fine too. Plus, after cooking with tri-ply, it’s very hard to go back to anything else. The overall even heating just cannot be beat. The nonstick coating slides food right off and cleaning is simple. The pan shines up nicely and looks lovely mixed in with its tri-ply brothers and sisters in my cabinet. Great pan.
